Optimasi Konsentrasi KOH pada Ekstraksi Karagenan dari Rumput Laut Eucheuma cottonii

Abstract

Penelitian ini memproduksi karagenan murni dari rumput laut Eucheuma cottonii menggunakan ekstraksi konvensional dengan pelarut KOH serta mengevaluasi pengaruh konsentrasi KOH terhadap kualitas produk. Ekstraksi dilakukan pada suhu 90°C selama 3 jam (pH 9) dengan variasi KOH 0,1 M, 0,5 M, dan 1,5 M. Hasil terbaik diperoleh pada konsentrasi KOH 1,5 M dengan rendemen 50%, kadar air 9,5%, kadar abu 36,98%, kadar abu tak larut asam 6,98%, viskositas 3 cP, dan kekuatan gel 5278,45 g/cm². Karakterisasi FTIR menunjukkan jenis kappa karagenan, ditandai oleh puncak 3,6-anhidrogalaktosa pada 923,93 cm⁻¹ dan galaktosa-4-sulfat pada 835,21 cm⁻¹. Konsentrasi KOH terbukti berpengaruh signifikan terhadap mutu karagenan yang dihasilkan.
